Enjoy this lower calorie, healthier, “skinny” version of the holiday classic, traditional Eggnog beverage.
SUMPTUOUS SKINNY EGGNOG
MAKES 6 SERVINGS
Ingredients:
- 6 Egg Yolk
- 4 Cups unsweetened Vanilla?Almond Milk
- 2 Cups Coconut Milk
- 2 Tsp. Vanilla extract
- 2 Tsp. Rum extract
- 1 tsp. Nutmeg
- 1 tsp. Cinnamon
- Stevia to taste
Directions:
1. In a small mixing bowl, place egg yolks in a and set aside
2. In a saucepan over medium heat, combine remaining ingredients and bring to a simmer. Reduce heat to low.
3. Take 1 cup from the hot liquid in the saucepan and add it slowly to the egg yolks, while whisking continuously. Transfer to the saucepan.
4. Bring back up to medium heat and whisk for 4-5 minutes.
5. Ready. Enjoy!
