Love At First Bite Salad

I call it my “love at first bite” salad because as soon as I tasted it, I fell in love with it.

MAKES 6 SERVINGS

Ingredients: 
Dressing:
· ¼ Cup (60 ml) Olive oil
· ¼ Cup (60 ml) Balsamic Vinegar
· 2 tsp. Honey
· Pepper

Salad:
· 3 Cups (750 ml) Baby Spinach
· 3 Cups (750 ml) Arugula
· ½ Cup (125 ml) Chickpeas
· ½ Cup (125 ml) Blue cheese
· 1 Cup (250 ml) Grapes
· 1 Cup (250 ml) Cherry tomato
· ½ Cup (125 ml) Almonds, sliced

Directions: 
Dressing:
1. Combine the olive oil, balsamic vinegar, honey and pepper.

Salad:
2. In a large bowl, toss together the salad, blue cheese, grapes, tomato and almonds.
3. Enjoy!
