HEALTHY BEEF FRIED RICE
Perfect for a Post-Workout Meal
MAKES 2 SERVINGS
8oz. (½ lb.) Extra-Lean Ground Beef½ Onion, chopped
1 tsp. Coconut Oil
2 Cups Basmati Rice, cooked
2 Cups Spinach
1 Cup Mushrooms, sliced
Sea salt and Pepper, to taste
1. In a large skillet, heat coconut oil over medium-high heat.
2. Add beef, onions and mushrooms. Use spatula to break the ground meat into several small pieces. Sprinkle with salt and pepper, if desired. Stir the beef occasionally to make sure it’s browning evenly and shows no signs of pink.
3. Scramble eggs.
4. Add the cooked rice, spinach. Stir everything well together.
5. Serve with Low-Sodium Soy Sauce or Hot Sauce.
